Paleo "Corn Dog" Muffins

A brief caveat before I share today's recipe: I created it based on a dare. A friend declared that I couldn't make a healthier version of everything, and offered up corn dogs as a particular challenge. I can't say that either of my kids have ever eaten one, and I wasn't really in the mood to deep-fry food on a stick.

Instead, I took my grain-free "corn" muffin recipe, and worked some chopped hot dogs into the batter. The result? A mighty tasty treat that my kids devoured with salad for dinner.

I haven't been baking with almond flour lately, so made my own almond meal for the muffins. If you want a muffin that resembles true corn dogs a bit more, use blanched almond flour.

Paleo "Corn Dog" Muffins

1 1/2 cups almond meal/flour
1/2 tsp. baking soda
1/2 tsp. salt
2 tbs. raw honey
4 eggs
4 nitrite-free hot dogs, cut into small chunks

Preheat oven to 320. Mix almond flour through eggs in a large bowl, until lumps are removed. Stir in hot dogs.

Pour batter into greased mini muffin cups. Bake for 15-20 minutes or until a toothpick inserted into the center comes out clean.
