Sparkling Strawberry-Mint Limeade
It's adapted from a Cooking Light recipe that uses agave nectar for sweetness. I reduced the amount of overall added sweetener and switched to raw honey. The sparkling factor comes from sparkling wine, but you can also use club soda if you prefer to make virgin drinks. Clearly I didn't offer up the former to ten 7-year olds today!
Strawberry-Mint Sparkling Limeade (Recipe Revisit)
adapted from Cooking Light
3 cups sliced strawberries
1/2 cup loosely packed fresh mint leaves
1/2 cup fresh lime juice
1/4 cup water
3 tbs. raw honey
1-2 cans Lemon Lime Zevia soda (or chilled sparkling wine)
Place first 5 ingredients in a blender; process until smooth (about 1 minute). Pour about 1/2 cup strawberry mixture into each of 6 glasses. Slowly pour about 1/2 cup wine or Zevia into each glass; gently stir to combine. Garnish with whole berries, if desired.
