Paleo Curry "Candied" Nuts

Sorry to disappoint if you were hoping for a thematic St. Patrick's Post. I'm not the slightest bit Irish, so didn't rock any green clothing or appropriate food today. Does a salad count? It is green, after all...

Tonight I jazzed up one of my favorites (Arugula Salad with Mango & Avocado), adding some chicken sausage for protein and some curry "candied" pecans rather than macadamias. I love mango and curry together, and the nuts added both sweetness, spice and crunch to the bowl.

These nuts are dangerously addictive! I had to seal up the extras right away for fear of shoving too many in my mouth before I even started dinner.
Paleo Curry "Candied" Nuts

1 cup raw pecans
1 tbs. curry powder
3 tbs. raw honey
1 tbs. olive or melted coconut oil
sprinkle of cayenne pepper

Preheat oven to 400. Combine curry, honey, oil and cayenne in a bowl. Add nuts and toss to coat. Spread out in an even layer on a parchment or Silpat-lined baking sheet and bake for about 5 minutes.

Allow to cool before snacking on or adding to salad.
