Quick Paleo Garlic Shrimp


With the caveman away on business and my daughter only able to eat liquids, I haven't been getting too crazy in the kitchen. Tonight I made her favorite tomato pesto soup, but she still had trouble eating it.

I've shared the recipe before: it's completely paleo, kid-friendly and delicious. Tonight I wanted to add a little protein into the mix for myself, so I whipped up some quick garlic shrimp. These could easily be prepared on the stove top, but I chose to use the oven so I wouldn't need to babysit them.

These shrimp are very reminiscent of scampi, and would also taste lovely over zucchini noodles or with some cauliflower rice. A little lemon juice would be a very nice addition if you're going with either of these options (I was out of lemons, and since I mixed the shrimp into my soup didn't really need it).
Quick Paleo Garlic Shrimp

1 lb. shrimp, peeled and deveined
1/2 stick butter
1/4 cup olive oil
1 tsp. garlic powder
large shake of red pepper flakes

Heat oven to 400. Put butter in a small baking dish and place in oven until melted. Add olive oil, garlic powder and pepper flakes. Stir to combine then add shrimp, tossing to coat.

Bake for 9-12 minutes or until no longer pink.
