Paleo Shrimp & Spinach Salad w Hot Bacon Dressing
I adapted it from a Betty Crocker recipe, which kind of amused me as I'm anything but a Betty Crocker kind of gal...
I did really like the inclusion of the feta, but if you're a better paleo person than me you can definitely omit it.
Paleo Shrimp & Spinach Salad with Hot Bacon Dressing
4 slices bacon, chopped
1/4 red onion, finely chopped
1/4 cup apple cider vinegar
1 tbs. raw honey
1/4 tsp. ground mustard
salt & pepper
4 cups baby spinach
1 cup sliced mushrooms
large handful feta cheese (optional)
1/2 lb. cooked, peeled, deveined shrimp
Cook bacon in a skillet over medium-high heat, stirring occasionally, until crisp. Stir in onion, vinegar, honey and mustard; stir until completely dissolved. Season with salt and pepper.
Toss spinach, mushrooms, feta (if using) and shrimp in a large bowl. Drizzle with hot bacon dressing and serve.
