Nut-Free Paleo Coconut Chocolate Chip Cookies

I'm really trying to cut down on nuts these days. I eat them when too mindlessly if they're in the house, and grew to rely on almond flour a bit too much in baked goods.

As such today's cookie is nut-free, and would be a particularly big hit with coconut lovers. I used coconut flour, oil, milk and shredded coconut. If you don't want any pronounced coconut flavor, you could swap out the shreds in exchange for a different mix-in. You could also use a different unsweetened milk (such as hemp) and butter instead of the coconut oil.

Nut-Free Paleo Coconut Chocolate Chip Cookies

3 tbs. raw honey or pure maple syrup
3/4 cup coconut oil or butter
4 eggs
1 tsp. vanilla extract
1 cup coconut flour
pinch of salt
1 tsp. cinnamon
1/2 cup shredded unsweetened coconut
3/4-1 cup dairy-free chocolate chips

Preheat oven to 375. Melt honey and coconut in a small saucepan, then pour into a large bowl. Add eggs and vanilla extract, mixing until smooth.

Add coconut flour through shredded coconut to bowl, stirring well. Fold in chocolate chips. Drop by tbs. onto a greased baking sheet, pressing down to flatten slightly.

Bake for 12-15 minutes or until bottoms begin to brown. Allow to cool before eating (these are quite fragile right out of the oven).
