Creamy Paleo Pumpkin Pie Smoothie

I tried out a pumpkin pie smoothie earlier this fall, but wasn't pleased enough with the results to share it here. While tasty, the treat contained frozen banana and orange, both of which threw off the balance of the flavor I was trying to achieve.

Not only was the flavor off, but the smoothie was much too laden with fruit. I really don't eat/drink much of the sweet stuff as a rule, so I wanted to come up with a pumpkin pie smoothie that got its creaminess and taste from my beloved pumpkin alone.

I never thought I'd find inspiration from The Pioneer Woman Cooks, but I did. Her pumpkin smoothie recipe is far from paleo, but relies on a trick that I'd never thought to try: freeze the actual pumpkin puree itself.

I'm pleased to report this worked great! I did include some dairy-free yogurt (So Delicious plain coconut), which I realize is not 100% paleo. I felt it really helped to boost the creaminess factor. If you're not concerned about fruit, I think 1/2 mashed ripe avocado *might* work as well.

Creamy Pumpkin Pie Smoothie
inspired by The Pioneer Woman Cooks

6 frozen cubes of pumpkin (I have a small ice cube tray)
4 ice cubes
1/2 cup plain non-dairy yogurt of choice
1/4 cup milk of choice (I used unsweetened almond)
1 tsp. pumpkin pie spice
1/2 tsp. vanilla
pinch of salt

Combine all ingredients in a blender and process until smooth. Garnish with additional pumpkin pie spice, if desired.
