Paleo Tilapia with Thai Coconut-Curry Sauce

Tilapia bores me to tears. It's such a bland fish, and I'm weary of dressing it up taco-style. I couldn't resist buying it on special this week, however, so I scoured the internet for creative ways to put it to use.

I've never made a curry I didn't like, so Cooking Light's Broiled Tilapia with Thai Coconut-Curry Sauce sounded perfect. It was pretty easy to tweak the recipe to make it paleo-friendly. I simply subbed coconut sugar and coconut aminos for the brown sugar and soy, and served the fish over some spaghetti squash stir-fried with a little ginger, garlic, lime juice and red pepper flakes.

This delicious sauce would work with any fish. I will definitely be making it again, with one exception: I think cauliflower rice would make a better base for the dish than the noodles. The "rice" would better soak up the sauce, whereas tonight I found myself with a lot left behind on my plate. And I hated to waste it! Now THAT is a sign of a dish worth making again...
