Paleo Maple Mustard Salad Dressing

It's kind of funny that the first weekend of fall puts me in the mood for maple syrup, when it truth the syrup season is spring, not autumn. Regardless, its flavor accompanies the other tastes of fall so well.

Tonight's salad dressings is one of my favorites; even my kids who don't tend to like dressing enjoy this one. I tried desperately to get beautiful pictures to prove its value; I did everything from slowly drizzle it onto some lettuce leaves to placing it in various pretty containers.

As you can see (or not), my attempts were not what I'd deem successful. You will just have to trust me on this one!
I enjoyed my dressing on a burger salad: basically all of the fixings of a deluxe burger, thrown on a bed of lettuce and baby spinach. This one also goes particularly well with roasted apples and pears, not to mention bacon ;)

Paleo Maple Mustard Salad Dressing

1/4 cup pure maple syrup
1/2 minced shallot
3 tbs. dijon mustard
2 tbs. apple cider vinegar
1 tbs. olive oil
salt & pepper, to taste

Combine all ingredients in a bowl with a whisk. Season to taste with salt and pepper.
