Homemade Paleo Blender Applesauce

Today's recipe is a quickie. Literally. While I've used my Vitamix in all sorts of crazy and creative ways, I never before thought to try to make applesauce with it. I kind of like the whole process of making homemade applesauce, loving the aroma from the slow-simmering apples that fills the house.
Sure, I didn't get that aroma today. BUT I also didn't peel a single apple (hello, extra fiber!), and had homemade sauce in under 10 minutes. Pretty darned cool.

While our family tends to love their applesauce a bit chunky, this one definitely met our standard for taste. I think one of the pluses was that I used an amazing raw honey I found on Abe's Market (one of my favorite healthy online stores).

Their Apple Spice honey was the perfect thing to add a touch of sweetness to this easy applesauce. Their delectable products are paleo-compliant, as they use only raw honey and organic spices and fruits to flavor it.

Plain raw honey would also work too, as would some pure maple syrup. If you don't own a high-powered blender like a Vitamix, I would suggest peeling your apples prior to blending. Even with my power house, I still had to add the apples gradually as all together they jammed up the works a bit.
Homemade Blender Applesauce

6 large apples, cored and cut into chunks (peeled if you don't have a high-powered blender)
3 tbs. raw honey (or more, to taste)
juice of 1/2 lemon
1/4-1/2 tsp. cinnamon, to taste

Combine all ingredients in blender and process until smooth. Serve room temperature, chilled or warm up before eating.
