Paleo Maple Almond Salmon
This recipe is ridiculously easy (4 ingredients, if you don't count salt and pepper), delicious, healthy and kid-friendly. I had it again for lunch and it was equally tasty as when it was fresh out of the oven.
You could experiment using different breading options; any nut meal would work, and I think incorporating a little unsweetened shredded coconut would be a nice addition as well.
I served the salmon with this easy spinach salad with roasted sweet potatoes, using a little palm sugar in lieu of brown and used only sweet potato, not squash.
Easy Maple Almond Salmon
3 salmon fillets (about 1.5 lbs. of fish)
salt & pepper
1/3 cup pure maple syrup
juice of 1/2 lemon
1/2 cup almond meal
Preheat oven to 350. Sprinkle both sides of fish with salt and pepper. Combine maple syrup and lemon juice in a shallow dish, and put almond meal in a second. Dip salmon in maple mixture, then dredge in nut meal, patting to coat.
Place on a rimmed baking sheet and bake for 20 minutes or until cooking through
