Paleo Shredded Crock Pot Beef

I broke out another PaleOMG recipe today, and as usual it's a winner! Actually this is a little more like a technique than an outright recipe: throw some beef in the crock pot, season it, cook and then shred. I made something similar when I used my crock pot for pulled pork back in May.

Summer is actually the perfect time to make use of your dusty crock pot! Between running around with errands, camp and play dates it was nice to only have to take a few minutes this morning to throw together an easy, kid-friendly dinner.

The caveman's kids and my own made soft tacos with their beef, while I just used it to top off a honking big salad. I put out olives, jalapenos, peppers, tomatoes, salsa, avocado, tomatoes and shredded lettuce. This meat would also taste delicious for breakfast with some eggs, or eaten in lettuce shells for paleo-friendly tacos.
Shredded Crock Pot Beef

3 lbs. beef of choice (I used hormone-free lean stew meat from Trader Joe's)
2 onions, thinly sliced
1/2 cup chicken broth
1 tsp. salt
1 tsp. pepper
1 tsp. garlic powder
1/2 tsp. chili powder
1/2 tsp. paprika

Place all ingredients in crock pot and stir to combine. Cover and cook on low for 8-10 hours. Once meat is tender, shred with two forks and dig in!
