Watermelon Pork Tacos in Lettuce (Whole30, Day 23)

I found today's dinner recipe in my Guy Fieri cookbook, but I'm glad it's also on the Food Network site, as it makes it easier to share. Watermelon Pork Tacos in Lettuce Shells is definitely a different flavor combination that I could never come up with myself. A lot of Guy's recipes are a bit heavy and use non-paleo ingredients, but I love that he isn't afraid of strong flavors and food with lots of personality.

I subbed jalapeno for the serrano chile, and coconut aminos for the soy sauce. The caveman did grill the pork, but you could obviously cook it on an indoor grill pan as well. I know watermelon gets knocked for being high in fructose, but honestly it's so non-calorically dense and the epitome of summer deliciousness. I don't eat it all the time, so serving it up like this was a real treat.

Today's menu:
pre-run - half Everyday Paleo apple muffin with almond butter
post-run - 2 slices bacon, small bowl carrot cake granola with coconut milk drizzle and berries
lunch - leftover roasted cauliflower soup
afternoon bridal shower - chopped raw veggies, grilled chicken
dinner - watermelon pork tacos

  2. me neither! Every Guy Fieri recipe I've made has been amazing. If only more were paleo-friendly...
