I'm "cheating" a little bit (bad word during Whole30, I know...) by waiting until today to post Day 21's menu and recipe. Yesterday I was a bit under the weather and hadn't yet eaten the recipe I wanted to post; I ate leftovers during the day and then had dinner at the prepared food bar at Whole Foods.
I did manage to prepare Elana Amsterdam's Roasted Cauliflower Soup recipe, but didn't get to enjoy it until today's lunch. I have found this lazy cauliflower girl's dream! I've really enjoyed the many ways I've managed to transform cauliflower into casseroles and rice/grit substitutes since going paleo. I'm not so wild, though, about the whole process of having to whip out the food processor and winding up with cauliflower bits all over my counters.
Elana's recipe calls for roasting the entire head of cauliflower, simply drizzled with a little olive oil and salt. Simple process, but required 1.5 hours to roast. I roasted the cauliflower in the morning, finished the soup off in late afternoon, and then had it waiting in the fridge for me today.
Wow! I didn't expect much from just broth, onion and cauliflower... I almost added some garlic and more seasoning but the soup was creamy, delicious goodness as written. I wanted to include some protein so crumbled cooked sausage on top, but it was thick and hearty enough to stand on its own. The green onions on top made the soup almost reminiscent of baked potato soup, even though this soup contains non potatoes.
before run - 1/2 Everyday Paleo apple muffin with almond buter
after run - homemade juice (kiwi, celery, cucumber, ginger, carrot, lemon)
lunch - leftover meatloaf cooked up with 2 eggs, spinach & tomatilla salsa
snack - handful Nuts.com sprouted pesto nuts
dinner - Whole Foods prepared food bar (salmon, chicken & lots of veggies with oil & vinegar)
