Paleo Lime Chicken Salad

My kids requested tacos tonight, which is a great meal to be able to serve up to suit my paleo palate as well. Sometimes I go for lettuce tacos, but tonight I was craving a big salad. I ate my lime chicken on tops of a bed of greens and other good stuff.

I modified a recipe I found on AllRecipes.com, doubling the sauce so I would have enough with which to dress my salad. I also added a little moisture by including some Trader Joe's salsa verde. As written this recipe has no real kick (as I was cooking for the kids), so the hot salsa definitely added a little something.

Paleo Lime Chicken Salad

1 lb. cubed chicken breast
1/4 cup apple cider vinegar
1 1/2 juiced limes
1 tsp. stevia or other natural sweetener (could omit)
salt & pepper, to taste
4 minced green onions
4 minced garlic cloves
2 tsp. minced fresh cilantro
choice of salad fixings (I went with lettuce, tomatoes, cucumber, avocado & salsa)

Saute chicken in a large skillet over medium heat, until no longer pink. Add vinegar through cilantro and stir to thoroughly coat chicken. Lower heat and simmer for another 10 minutes.

    I actually wrote a post summarizing my research on paleo, and in my next one, I want to list a bunch of resources for paleo eating. your blog will definitely be on the list! your recipes are awesome and I want people to converttt! mwahaha

  2. I'm glad you've like my recipes! Hmmm, yes I think you might risk being bludgeoned by cave people with the words "whole wheat" in your blog title! Just kidding ;)

    seriously, though, good luck and best wishes exploring paleo a little more. I am probably not as strict as many, but I am a foodie at heart so I hope to at least provide inspiring recipes to try!
