Paleo Blueberry Breakfast Clafouti (Whole30, Day 27)

Not only do I have a recipe to share today, but it's a really tasty treat that is still Whole30-friendly! I had a little extra time on my hands this morning, so was able to whip this one up. The prep goes quickly, you just have to allow 40 minutes for baking.

I found this plenty sweet without any added sweetener; I did sprinkle powdered sugar and drizzle a little maple syrup on my kids' plates... don't judge, they're not on the Whole30 ;)

This would work with many different fruits, and I'm curious to make it with almond extract and some added slivered almonds.

Blueberry Breakfast Clafouti

6 eggs
1 cup coconut milk
2 tbs. melted coconut oil or butter (use ghee for Whole30)
pinch of salt
1 tsp. vanilla
1.5 tsp. cinnamon
1.5 cup blueberries

Preheat oven to 400. Grease a pie pan. Beat eggs in a large bowl with a whisk or electric mixer. Add in coconut milk, melted butter or oil, salt, vanilla and cinnamon.

Carefully pour egg mixture into prepared pan; scatter blueberries throughout and bake for 40 minutes or until set. The clafouti will puff up in the oven and then sink once it starts to cool.

Today's menu:
breakfast - blueberry clafouti
lunch - leftover fried chicken and salad
dinner - will be eating out, planning on having some sort of protein with a salad


  1. Is it melted butter or melted coconut oil?
    Ingredients say coconut oil, instructions say butter...Hmmm...

  2. If it were butter, it would have to be melted clarified butter to fit within the Whole30 guidelines, right?

    1. Yes, it would have to be ghee. When I made this during the Whole30 I used coconut oil.

  3. I just updated the original post to reflect it can be coconut oil, ghee or butter. The first 2 options are Whole30 compliant.
