Curry Fish Chowder (Whole30, Day 25)

This was another running around type of day, so thank goodness I had leftover hash and an easy dinner planned.

Today's menu:
breakfast - sweet potato hash
lunch - smoothie (spinach, coconut milk, 1/2 frozen banana, 1/2 avocado, ground flax, cinnamon)
snack - handful of sprouted nuts, palmful of raspberries
dinner - Health-Bent's Curry Fish Chowder

I definitely didn't eat enough during the day, so by the time I threw together dinner I was famished. I will sheepishly admit that of the 2 plantains I used to top tonight's chowder, I easily ate at least 1.5 of them! Once the caveman and I were done with our dinners I kept picking at the remaining plantain "croutons..."

... suddenly they were all gone. Oops. I did have a little bit of a tummy ache afterward, too. Way too much starch today, even for a girl who generally doesn't worry about such things.

It's very hard for me to say no to packaged plantain chips, so naturally fresh, crisp plantains bits sprinkled in salt are even harder to resist. Much like raw cashews and Trader Joe's roasted almond butter I should probably not have them on hand too often!

The chowder would do just fine without the plantain, although both of us liked it sprinkled on top. The spices were perfectly balanced, and the fish cooked up amazingly fast in the chowder. I did use the juice of two limes and a little hot sauce to finish it off, but would definitely recommend the recipe!
