Paleo Cauliflower, Spinach & Sausage Casserole


In preparing for my upcoming Whole30, I am trying to get better about planning ahead and making dishes that I can have on hand when hunger strikes. Particularly at lunch and breakfast time, it's a huge help to have something healthy and satisfying that's ready to go.

I posted on Facebook that I realize I can no longer keep a stash of raw nuts on hand; I find that if I let myself get too hungry, I basically inhale more of them than I would freely admit to anyone!


I'm eating dinner out tonight, so took the time I'd usually prep an evening meal to cook up The Prime Pursuit's Sausage & Spinach Casserole, which uses cauliflower in lieu of grits.


Yum! Getting the cauliflower ready to go was the only aspect of the dish that really took any time, and you could always do it in the microwave if you want things to go more quickly. I made the recipe as written expect for including a bit of black in addition to the red pepper. If you do dairy and/or aren't on a Whole30, I'm thinking a little goat or feta cheese would be awesome in this!

I now have a delicious meal to look forward to after tomorrow morning's run. I would highly recommend this one if, as the original post's title suggests, you might be getting a little weary of eggs in the morning.
