Grilled Salsa Drumsticks

I linked to this chicken recipe in yesterday's sweet potato salad post, but it's worthy of standing alone lest you missed it. I stocked up on drumsticks when they were 99 cents a lb at Whole Foods, and while at the store stumbled upon this recipe in their Whole Deal flyer.

It sounded to easy to yield impressive results, but I'm happy to report they were a hit! It's always nice when you can find a quickie that doesn't require a ton of fancy ingredients, but gets the job done. These crisped up nicely, yet still had juiciness thanks to the marinade.

same photo as yesterday... sorry! These just photograph better next to the salad.

Grilled Salsa Drumsticks
from Whole Foods

8 chicken drumsticks (about 2 lbs)
1/2 jar (8 oz.) salsa
1/3 cup orange juice
1 tablespoon olive oil
1/2 tsp fine sea salt

In a large bowl, toss together all ingredients; cover and chill 8 hours or overnight. Preheat grill to medium heat. Grill chicken, turning frequently, until cooked through and deep golden brown, 20 to 25 minutes.
