Ginger Shrimp Salad & Curried Hash

I wanted to make a nice lunch for the caveman's 50th; we're going out to dinner tonight with all the kids, so I wanted to prepare something relatively light. I also wanted to use up a few things I had on hand that were looking for a purpose: shrimp, sweet potato and zucchini.

Kind of an odd trio, right? So imagine my surprise and happiness when a little web searching brought me to the perfect meal to make, courtesy of Everyday Paleo. Her Ginger Shrimp Salad and Curried Hash came together easily and tasted great.

For some reason my hash never really got crisp... I think perhaps my veggies were a bit soggy? I would definitely make it again, though, and plan to eat the leftovers for breakfast with some bacon crumbled in. I want to return to this one and make something similar once I kick off my Whole30!
