Baked Eggs in Pepper (Whole30 Day 7)
My daughter and I had plans to go on a date tonight which wound up including eating out. I think restaurant dining is everyone's worst nightmare while doing a Whole30. I researched online, though, and came up with a "safe" choice on the Cheesecake Factory menu (that was, naturally, MUCH less boring than all the crazy stuff the neighboring tables ordered!!)
Since I was eating out at dinner I took the time to make lunch. This one couldn't have been easier, and was a great way to utilize the red and orange pepper that I bought a couple of days ago and can't remember why! I think I was planning on just chopping them for salad, but this was a much tastier way to go. As I had two peppers on hand I've written the recipe for two; you can obviously tweak to however many you want to make.
Baked Eggs in Pepper
2 peppers, cut in half with seeds removed
4 strips bacon
salt, pepper & seasoning of choice (I had fresh oregano on hand)
Preheat oven to 400. Cook bacon on stovetop until just barely cooked (not too crisp). Place bacon strips in a criss-cross inside hollow peppers. Crack egg inside. Sprinkle with salt, pepper and seasoning. Bake for 20 minutes or until eggs are done to your liking.
breakfast - spinach, avocado, frozen banana, 1 tbs. nut butter & coconut milk smoothie
lunch - one baked egg in pepper with homemade guacamole
snack - 2 tbs. cashew hummus with baby carrots
dinner - plain turkey burger with green salad, dressed with o&v
after dinner - 2 pieces celery with a little more guac
I felt good today, but actually wound up with a slightly upset tummy after dinner. Honestly, the burger was about as bland as could be, I confirmed it was gluten-free and I know my salad was dressed with nothing but the oil and vinegar, as I put it on myself... probably just a fluke but not very fun/fair after my saintly meal!
