I have never been a chicken salad fan, as most versions are so loaded with slime (ie. mayo) that they are an instant turn-off. I realized, though, that when I make it myself good things can happen!
Finally getting past my mayo aversion and making my own Paleo version from scratch has mad all the difference. I already shared how much I loved the Maple Chicken Salad from Eat Like a Dinosaur, and I would also highly recommend Whole Foods' Sonoma Chicken Salad, which is particularly nice for summer get-togethers.
Last night I came up with a similar warm weather-inspired salad, which was also motivated by my desire to make something quick that would use up some cooked chicken. This was beyond easy and delicious! Using the avocado meant I hardly had to use any mayo at all.
I'm already thinking of how making this with lemon juice in lieu of lime, and crumbling a little bacon into the mix would be divine...
Avocado Chicken Salad
2 cups cooked chicken, shredded
1 ripe avocado
about 2-3 tbs. mayo
chopped cilantro (I probably used a few tbs. but less than 1/4 cup)
juice of one lime
salt & pepper, to taste
Combine all ingredients in a bowl and enjoy!
