Paleo Mango Pudding

I have come to accept that my kids don't seem to like mango. I don't know if it's the taste or texture, but the various times and ways I've presented it to them just haven't been successful.

Their loss, as in their absence tonight I made a tasty, quick mango pudding that I absolutely adored! I had originally planned to make some ice cream with coconut milk, but didn't feel like listening to the whir of my ice cream maker. This dish came together much faster AND quietly...



Paleo Mango Pudding

2 ripe mangoes, peeled and diced
1 can coconut milk
2 tbs. raw agave nectar or honey

Combine ingredients together in a blender and process until smooth. Pour into a medium saucepan and heat over moderate heat on the stovetop, until it just starts to bubble (stir frequently).

Meanwhile, mix the following in a small bowl:
2 tbs. water
4 tsp. arrowroot powder
pinch of salt
1/4 tsp. vanilla extract

Once mango mixture begins to bubble, lower the heat and slowly pour he arrowroot slurry to the pot. Stir with a whisk for a couple of minutes until the pudding begins to thicken. Remove from the heat and pour into small bowls. Chill until ready to serve.
