Paleo Almond Meal Porridge

My very first post on this blog was one of my go-to breakfast staples, which I made even before my Paleo days. It's a simple almond meal porridge, that lends itself to a zillion variations. There are many Paleo hot cereal recipes out there, but many require whipping out the food processor to chop up nuts. While I do often make nut meal from scratch, I love that with this recipe I can just turn to the stash of almond meal that I buy cheaply at Trader Joe's.

It's also a plus that berry season is on the horizon. I was able to score some blueberries and organic strawberries this weekend, which makes me positively giddy! While this cereal can stand on its own, it definitely tastes best (in my humble opinion) with some berries stirred in. During the winter I occasionally make it with frozen ones, but fresh is obviously tastiest.


I'm posting the recipe again, with the variation I made today:


ALMOND MEAL BREAKFAST PORRIDGE

1/4 cup almond meal
1 tbs. ground flaxseed
1/4 cup unsweetened shredded coconut
1/4 cup liquid of choice (plain water works, or coconut or almond milk)
1/2 tsp. cinnamon
1 egg
couple of drops of vanilla stevia
1/4 cup of blueberries and strawberries
tbs. raw cacao nibs
tbs. raw sunflower seeds

Heat almond meal, flax, liquid, coconut, cinnamon and stevia in a microwave-safe container; heat for one minute. Stir to mix in egg, then add berries and sprinkle with cacao and sunflower seeds. Heat for another 45-60 seconds until set to your liking.

    1. sorry to hear about your allergy... I consider myself lucky to not have an issue with eggs, as in recipes like this they are key to helping bind the ingredients together. I think if you tried to make it without the results would taste good but would stay rather liquid.

  2. You can replace eggs in recipes by using half a pureed banana
