I didn't really do that much for Easter this year, as I didn't have my kids. We crammed in a lot of holiday things together on Good Friday, but I kind of took Sunday off. Didn't even cook!
I was much appreciative, though, of the various Easter food on special at the store. I scored some "naked" leg of lamb, which I couldn't wait to turn into a delicious Indian entree.

Lamb with Spinach Sauce was DELICIOUS! The lamb just got more and more tender while simmering in the sauce, which I made all the better by using leftover homemade tomato sauce as opposed to plain puree. I also used olive oil rather than vegetable, but otherwise made the recipe as written.
