This is my first kid-free night in over a week, so I'm marking it by eating something they tend to shun: seafood. I had picked up salmon steak at Whole Foods and found this easy recipe for Honey Jalapeno Salmon that sounded delicious.

While it was a breeze to make, I unfortunately got side-tracked while reducing the glaze. It wound up a bit too viscous and hard to pour well over the fish. I still found the flavor was great though, and I would definitely recreate it again. While I used lemon, I think next time I might go with lime and perhaps add a little gluten-free soy sauce as well.
I served my salmon on some arugula, along with diced mango and avocado. The greens didn't really need any dressing beyond a splash of olive oil, squirt of lemon juice and sprinkling of salt and pepper. Proof positive that sometimes simple gets the job done (and this meal was the perfect contrast to last night's french toast!)
