Paleo Grain-Free Meatballs


The boy requested pasta and meatballs for his birthday dinner, so I came up with a meatball recipe that would work for everyone. I have made Paleo-friendly meatballs in the past with almond meal, but this time went with ground flax seed. I preferred tonight's results, as the texture of flax is a bit gummier and seemed to help bind thing together really well.


Paleo Grain-Free Meatballs

1 lb. ground protein of choice (I used grass-fed beef)
1/4 cup ground flax
1 egg
2 minced garlic cloves
1/2 small onion, minced
1 tsp. Italian seasoning
pinch of red pepper flakes
salt and pepper
1 tbs. olive oil


Preheat oven to 350. Combine all ingredients in a large bowl. Form into balls and place on a baking sheet. Cook for 25 minutes or until no longer pink.

I ate my meatball on a bed of sauteed vegetables (kale, zucchini, pepper and mushrooms) topped with some homemade marinara. They would taste great with some zucchini or squash noodles, or perhaps made smaller and cooked in tomato soup.
