Speedy Thai Seafood Salad

It would seem I'm on a salad kick these days. Perhaps so, but I also think some of my dinner recipes have been chosen by a lack of time to spend slaving in the kitchen! I spent almost 13 hours of the past 24 at my kids' school, chairing our annual PTO winter carnival. When I got home tonight I was starving, with feet aching, hence a quick dinner was on tap...

I *never* buy precooked shrimp, but made an exception for this recipe. You could obviously buy fresh and cook beforehand. I also think some diced avocado would taste delicious in this!

Speedy Thai Seafood Salad

1 lb. precooked medium shrimp
8 oz. crabmeat
1 red pepper, thinly sliced
4 chopped scallions
1 cup broccoli slaw
juice of 1 lime
1 tsp. stevia
1 tsp. salt
1 tbs. chile garlic sauce
handful of raw cashew pieces

Put shrimp through slaw in a large bowl. Combine lime juice, stevia, sat and chile garlic sauce in a separate, small bowl. Pour over salad and toss to coat. Taste for seasoning and sprinkle with cashews.
