Tonight I made Emeril's General Tso's Chicken, omitting the red chile peppers as I'm trying to avoid nightshades and the kids wouldn't have been down with the spice.
To make the recipe Paleo-friendly I made the following substitutes:
arrowroot powder for cornstarch
coconut oil for canola
stevia for sugar
gluten-free tamari for the soy
I have to agree with many of the reviewers on the Food Network site that the sauce was a bit too thick; I think if I made this version again I would double it in order to have enough to sufficiently coat the chicken. We all loved the taste, though, and it was nice to eat a healthier version of a dish I haven't eaten in years!
