Tonight is another example of how to take a recipe and tweak it until it's Paleo compliant (yet still suitable for a family meal). I have done the same to other Rachael Ray dishes in the past, which usually involves removing a good deal of cheese and gluten!
Her Creamy Chicken-Apple Chili is a kid-pleaser, and really hit the spot on a chilly winter night. I used hemp milk and almond flour, and simply left the beans and cheese out of my portion. The combination of the apple and onion with the creamy sauce and chili spices was delicious!
