Turkey Burgers with Apple, Bacon & Rosemary
I got the inspiration for tonight's recipe from PaleoOMG. For about two weeks now I've been salivating over the her recipe for Apple & Bacon Rosemary Pork Burgers. The herb is my absolute favorite, and the thought of apple sauteed in bacon fat could not be more inspired.
I picked up some dark meat ground turkey on special at Whole Foods, and decided it would be a perfectly suitable stand-in for pork. I also added some onion into the mix, which tasted perfect with the apples and bacons. I indulged the kids with a piece of some English coastal cheddar, but remained pious myself without.
For serving I crumbled my burger up in a bowl of baby spinach along with some other veggies. I have some leftover and am already thinking how good it would taste scrambled with some eggs and maybe roasted sweet potatoes or some sauteed kale.
