Spinach Salad w Shrimp & Feta


Feel free to omit the feta in tonight's salad, but I will say that just a smidge goes a long way! This recipe is another one I've turned to since my pre-Paleo days, a quickie I snipped from a Rachael Ray magazine.

The dressing is what makes it, and the better the ingredients that tastier the dressing. You really need a good quality olive oil, and I recommend a liberal hand with the pepper mill.
