Paleo Shrimp & Sausage Jambalaya

Now that I have come to love Paleo cauliflower rice, I thought it about time to make one of my favorite dishes that really needs rice to complete it: jambalaya. I've stumbled upon several Paleo variations on the theme, but was curious to try a recipe from a new-to-me Paleo blog: Paleo Madeline.

I will admit, I was drawn to the site right off the bat, as I named my daughter Madeline. I also love the photography and layout, not to mention some very interesting features like Paleo tips and product spotlights. Lovely blog, and delicious jambalaya recipe!

For my Shrimp & Sausage Jambalaya I used a full pound of shrimp and less sausage, simply because I already had the shrimp on hand and bought a 10 oz. package of chicken andouille at Whole Foods. My only other tweak was to omit the parsley, mainly because I accidentally omitted it from my shopping list this morning!

I still literally gag at the smell of cauliflower as I'm ricing it, yet once it gets incorporated into what I'm cooking I suddenly find it not just edible but appealing! This phenomenon fascinates me, and reminds me it's always good to step outside your comfort zone once in a while when it comes to food.
