Guacamole Omelette

Nothing makes me crazier than throwing out food. We made pretty costly trips to Whole Foods and Trader Joes on Friday preparing for New Year's Eve; after the fact I had no specific meals planned, but quite a few random leftovers I did not want to waste.

Tonight I put to use the following: homemade guacamole, peeled and chopped sweet potatoes (I made Food Renegade's delicious bacon-wrapped sweet potato bites again!), salsa and Trader Joe's Pinot Grigio salami.

First I diced and pan-fried the salami until crisp. Then I made a two-egg omelette which I filled with the guacamole and meat. Then I topped the omelette with the salsa and served it alongside sweet potatoes roasted with chili powder and cinnamon.


A delicious and easy spur-of-the-moment dinner, which made me feel virtuous and thrifty. I did NOT feel guilt at throwing out the crackers and frozen Costco spanakopita a friend of mine brought to our NYE party though... is that wrong? ;)
