Crock pot Indian Curry Beef w Spinach & Sweet Potatoes

I had jury duty today, after having dodged the proverbial bullet for years. While it certainly wasn't fun, sitting in a stuffy room for hours allowed me to plow through two nutrition books and marvel at the unhealthy snacks everyone around me was downing ;)

Being the Type A that I am, I worried there was always the chance I'd be stuck in the courthouse all day. As such, before I left I already had the crock pot going with something for me and the caveman to enjoy.

Neither of us are fans of traditional pot roast, so I took some beef stew meat and tried to gussy it up with Indian flavors. The Greek yogurt added at the end did add a nice dimension to the sauce, but could certainly be omitted if you don't include it in your diet.

Crock Pot Indian Curry Beef with Spinach & Sweet Potatoes




2 tsp olive oil
1 chopped onion
2 cloves of garlic, minced
1 tsp cumin
3/4 tsp turmeric
3/4 tsp cayenne pepper
1 tbsp grated ginger
1 cup low beef broth
1.5 lb beef roast/stew meat, cut into chunks
1 lg.sweet potato, already roasted for about 45 minutes & diced
2/3 cup plain Greek yogurt
3 big handfuls of baby spinach
salt and pepper
In a large skillet over medium heat add the oil, onion and garlic.  Saute for about 4 minutes, stirring constantly.  Add the spices, ginger and beef broth.  Cook for about 2 minutes then take off the heat.
Add the beef, onion mixture + liquid and sweet potato to the crock pot.  Stir together then set on low for 6 hours.
After 6 hours shred the spinach in your hands before adding it to the crock pot.  Stir in the yogurt and turn on low, cooking for another 30 minutes.
