Some Paleo purists might balk at a vegetarian entree, but I like to honor the notion of "Meatless Monday" at times. This recipe for Vegetarian Tortilla Soup from 101 Cookbooks is a delicious way to take the chill off on a December day.
What really makes the dish are the various forms of tomatoes it contains: crushed, roasted cherry tomatoes and chopped sun-dried. I also love the many toppings that suit it. Sliced avocado, cilantro, roasted pepitas... I'm sure a little protein like cooked chicken could make the mix as well!
I did want to add a quick note about the crispy corn tortilla strips. They are obviously not Primal or Paleo, but if you're willing to bend at all there is a smart way to do it. The only corn tortillas I feed my kids are by Food for Life, which I buy at Whole Foods.
They contain only sprouted corn, which is organic and much easier to digest. I do not eat them often at all, but I do not feel guilty feeding them to my kids and would consider them a sensible compromise if you respect Mark Sisson's 80/20 guidelines.
