Salmon, Avocado & Egg Salad

I bought canned wild salmon at Whole Foods but just hadn't been inspired to crack open the can. Today I finally did, and put it together in a very quick and tasty lunch.

I'll admit, I've never been a fan of canned fish. Opening it today I felt like I was getting ready to feed my cats! I respect, though, that canned wild salmon is an inexpensive and convenient way to get the health benefits of the fish without the fuss. 

For me, the secret to enjoying the canned stuff was to mix it in with a lot of other favorite flavors. I simply chopped up 1/2 an avocado, two hardboiled eggs, some cherry tomatoes and 1/2 a red pepper. I added the canned salmon and then dressed it with some lemon juice, olive oil and salt and pepper.


I think this would taste great with some crumbled bacon as well, and would be nice served on a bed of baby spinach.
