I have found a new favorite recipe that is both easy to make AND delicious! For months I've had the page for Shrimp Cakes in my Primal Blueprint cookbook dogeared, and I'm so glad to have finally whipped it out.
The recipe could not be simpler: raw shrimp, coconut milk, cilantro and jalapeno chopped in a food processor, formed into patties and pan-fried in some oil. I have exceedingly bad luck at keeping things like crab cakes and homemade veggie burgers together while cooking, but these were sturdy, moist and a breeze to cook. They had a ton of flavor for so few ingredients (though I did find I needed to season them with a dash of sea salt).
