Paleo Chocolate Pumpkin Bowl
My kids love to snicker at my crazy breakfast concoctions. While some days I do whip up some pretty standard egg dishes, more often than not I'm creating some sort of green smoothie or breakfast porridge out of rather nontraditional ingredients.
I will admit that I am a great lover of all evil breakfast food: pancakes, cereal, toast, etc. I can certainly live without the carb and sugar overload, but I am most happy when I can come up with my own substitutes to satisfy my morning cravings.
My plan today was to come up with a sort of quickie muffin/cake with pumpkin, coconut flour and cocoa powder. I don't really use my microwave to cook much, but I do find it handy for breakfast porridges and such. I had hoped that the jumble of ingredients I mixed up would someone come together in an attractive, tasty fashion.
I accomplished the second objective, but can't say it was the prettiest to look at! Less a muffin and more a bowl of chunky goodness, this was still something good to eat and worth revisiting to tweak it. I think, perhaps, I should have laid off the chocolate whey protein and added more liquid.
Chocolate Pumpkin Bowl
1/2 cup pureed pumpkin
2 tbs. coconut flour
1/2 tsp. baking powder
1/2 tsp. pumpkin pie spice
stevia drops, to taste
1 scoop chocolate whey
2 tbs. cocoa powder
Combine all ingredients and microwave for 2-4 minutes, depending on your oven. I cooked mine for about 3. I topped it with raw pecan pieces, shredded coconut and unsweetened carob chips (mostly to pretty it up for the photo!)
I will most definitely have to come back and tweak this idea...
