We have quite a collection of children's cookbooks, and yesterday my son requested that I make a recipe out of The Princess and the Frog: Tiana's Cookbook. Not surprisingly, it's not exactly a volume full of Paleo-friendly fare. I'm always up for a challenge, though, so I transformed his choice (chicken and biscuits) thanks to a little help from Paleo Comfort Foods.
For reference, this is the base recipe (the blog poster made a few tweaks herself). For the chicken portion I used coconut flour and unsweetened almond milk. Although corn and peas are not Paleo, I did use a bag of organic vegetables that contained them to appeal to the kids. In the end I did not eat many, and if I'm going to "cheat" I won't lose sleep over a few spoonfuls of organic veggies!
I completely scrapped the biscuit portion and instead made the crust from the Pot of Chicken Pie recipe from PCF. The boy noted my version looked a little different from the puffy, doughy biscuits in the cookbook photo, but both kids are used to my kitchen experiments and obsession with healthy cooking. They cleaned their bowls and had seconds!
