Seashore Shrimp Salad

I've shared my mixed feelings about Rachael Ray on here before; my kids love every recipe of hers I've ever made, yet even when tweaked to be healthier most are not even close to being Paleo. Tonight's dish, however, is one I turn to often when I have good shrimp on hand and want a light dinner that doesn't take much prep work.


Seashore Shrimp Salad calls for precooked shrimp, but I think it really benefits from fresh shrimp that's freshly cooked in a little olive oil and seasoned with lemon, salt and pepper. The amount of dressing is also obscene... fat and calories aside, if you poured the whole amount over your salad you'd wind up with a slimy, soupy mess!
