Salad w Spicy Avocado Dressing

Due to our power outage and the kids being off school this whole week, lunches have been the hardest meal for me to properly make for myself this week. Once the power came back I've been getting by on green smoothies and other quick fixes, which are not necessarily the most interesting or inventive about which to post.

Today we finally had a little bit of peace and I had some extra time to make myself a proper lunch. First I filled my bowl with all sorts of tasty salad elements: romaine, baby spinach, roasted turkey breast, cherry tomatoes, orange pepper, diced green onion and minced cilantro.

To top it off I came up with a quick but tasty spicy avocado dressing that is reminiscent of guacamole with a thinner texture. It was delicious and I will definitely be making it again! I think it would work really well with eggs scrambled with some salsa and chorizo as well.

Spicy Avocado Dressing

1 large ripe avocado, pitted
juice of one lime
1 tsp. chili garlic sauce
2 garlic cloves, minced
4 tbs. olive oil

Combine all ingredients in a food processor or blender, then season with salt and pepper to taste.
