Pan-Seared Salmon with Mushrooms & Spinach

What a day... I wound up not even getting to dinner prep until after 8pm, due to a seemingly endless stream of mishaps and mayhem. I had actually planned a slightly more elaborate meal, but completely forgot it involved a homemade sauce and at least an hour's marination.

Instead I took my intended star ingredient (wild salmon) and decided to throw it together in the easiest way I know: a simple pan-seared recipe I picked up from Cooking Light magazine years ago.





This doesn't have any bells and whistles, but sometimes it's nice to just have the food speak for itself. I think the shot of fresh lemon really makes the dish, and I used shiitake instead of button mushrooms which added a lot of flavor.

Here's hoping for a less hectic rest of the week... I'm eager to try out Mark Sisson's shrimp cake recipe and the apple walnut "bread" from the Wheat Belly cookbook. I always want to cook up a storm when I get back from a kitchen hiatus!
