I apologize for my absence of late, but as the caveman and I had to spend the holiday away from our kids we decided to make the most of it by escaping on our own to the Dominican Republic.
While I had my worries about staying at an all-inclusive, I have to say it couldn't have been easier or more pleasant to stick to a Paleo diet on our trip. Our resort (Zoetry Agua) served its own herbs straight from the garden, and included the nutritional information (carb count and all) on its menus. The only "cheats" I indulged in were the occasional organic soy milk cappuccinos and one Pina Colada on the beach. Otherwise it was a ton of delicious fish, meat, grilled vegetables and salad.
Breakfast, quite predictably, was usually eggs. Although the resort aimed to please, I couldn't expect them to have ground flaxseed and raw almond butter on hand! They did, however, quickly pick on up my desire to forego such niceties as whipped cream on my fruit or hash browns on the side.
Since I was able to enjoy so many fresh grilled and sauteed vegetables on the trip, I was still craving them upon my return. Tonight I made Health-Bent's Paleo Pizza Salad, which I made and loved once before. For protein I used fresh chicken and spinach sausage, and I went to town on the vegetables: mushrooms, eggplant, olives, shallot, zucchini and yellow and red pepper.
It serves me right grocery shopping two days after Thanksgiving, so as such the fresh basil looked absolutely dismal. Instead I decided to stir in a couple of tablespoons of pesto. Otherwise I made the recipe as written and it was a slam dunk again!
