Grain-free Paleo Pumpkin Pancakes

For the past couple of mornings I've been having a bowl of my Pumpkin Porridge after working out. Hence I had an open can of pumpkin this morning, and a request from the kids for pancakes. I decided to tinker a bit and make something that would be suitable for all of us. 

I served them with a drizzle of raw honey (for the kids, they were sweet enough as is for me) and sprinkling of coconut and raw pecans. You really can't taste the nut butter in these, which was a plus for my daughter who's not a huge fan. I've seen other riffs on these cakes using mashed banana in lieu of the pumpkin as well.

Grain-Free Pumpkin Pancakes

4 tbs. pureed pumpkin
4 tbs. nut or seed butter of choice
2 tbs. ground flax (the recipe works without this, but I like the added fiber)
3 eggs, beaten
1 tsp. cinnamon
2 packets stevia
1/2 tsp. baking powder

Combine all ingredients and mix well to get rid of pumpkin "lumps." Preheat griddle and melt some butter or coconut oil for cooking. These pancakes are a bit fragile, so I found it best to kind of lift them gently a bit on each edge before attempting to flip. This patch yielded about 8 small pancakes for us.
