For my family cooking website I tweaked a Fluffy Pancake recipe from the December issue of Rachael Ray magazine. As written, the recipe is about as good for your health as Ms. Ray herself, whether you follow Paleo or not. White sugar, white flour, milk... no thanks!!
What I liked, though, was getting a nice ratio to work from, as I often find my pancakes too dense. It was well worth the extra step to beat the egg whites, and nice to find a recipe I could make for my kids that I'd be willing to nosh on every once in a while myself.

1 1/2 cups almond flour
3 tbs. palm sugar or raw honey
1 1/2 tsp. baking powder
1 1/4 cups coconut milk
2 eggs, separated
3 tbs. grassfed butter, melted
Combine dry ingredients in a medium bowl. Mix egg yolks, milk and butter (plus honey, if using) in a separate bowl, then pour into flour mixture. Mix well.
Meanwhile, beat egg whites until they have soft peaks. Carefully fold them into the batter and cook and serve as desired.
