Butternut Squash & Apple Soup
Much like Rachael Ray, Ina Garten (the Barefoot Contessa) is simply not a celebrity chef I associate with Paleo-friendly fare. In fact, even before I went primal I wasn't drawn to her cooking, as it's quite heavy and frankly just not my taste.
Imagine my surprise, then, when I went nosing around online for a good butternut squash soup and stumbled upon her recipe for Butternut Squash & Apple Soup. The ingredient that really intrigued me? Curry. I happened to only have hot curry on hand, and while this worked great for my palate it was definitely too much to make it a kid-friendly soup. If you're cooking for children or anyone who fears food with kick, go with the mild powder!
Also, if you're looking to keep the sugars down this should work fine without the cider at the end. I think chicken broth or even more water would thin out the soup well without detracting from the overall flavor.
I finished off my bowl with a sprinkle of bacon just because I love the contrast of textures. And because I love bacon ;)
