I've been obsessed with mushrooms lately. A few times a week I've had a crazy-good bowl of sauteed kale, garlic, onions, mushrooms often with some sort of protein thrown in. Sometimes I cook them up with some eggs. Although the kids aren't on board with my affection, the caveman and I both adore mushrooms in any way, shape or form.
I had some nice steak from Whole Foods on hand so decided tonight was a good one for a simple steak salad. First I cooked the steak with a little olive oil, salt and pepper. After removing the meat I cooked mushrooms in the same skillet along with some thinly sliced garlic.
Once the mushrooms were thoroughly cooked, I removed them from the heat and poured a mixture of balsamic vinegar, olive oil, dijon mustard and a smidge of raw honey. This became the dressing for the steak and greens, along with some sliced red onion and avocado.
If you don't avoid all dairy I highly suggest sprinkling a little raw bleu cheese to top everything off.
