Pumpkin Breakfast Pudding

I have posted earlier about including pumpkin in the various Paleo porridges and hot cereals I concoct. For the most part I've just stirred in a little pumpkin and perhaps added a little extra cinnamon or pumpkin pie spice, but this is an actual recipe I've tweaked that I'm quite proud to share.

I enjoyed a bowl of this to start my day and it kept me going through a strength training workout and all the way up until lunchtime. Don't mind the half-eaten bowl, by the way... the cave man's two kids spent the night, so with a house full of four headed out the door to school I completely forgot to snap a shot when it looked nice and pretty!


Pumpkin Breakfast Pudding
1/2 cup pureed pumpkin
2 scoops protein powder
1 tbs. coconut oil, melted
1 egg, beaten
1 packet stevia
2 tbs. flax
2 tbs. unsweetened flaked coconut
1 tsp cinnamon
1/2 cup almond milk
Combine all ingredients and microwave for 3 minutes or until set, stirring once during cooking. Can top with some raw nuts, cacao nibs, more coconut, etc.
