Cinnamon Apple Chips

Forgive my absence, but the kids and I escaped to Massachusetts for the Columbus Day weekend. I have definitely had a few bites of forbidden foods here and there, namely of my daughter's Dirty Pumpkin (pumpkin ice cream with mashed chocolate cookie pieces) ice cream at a local farm.

Obviously I won't becpromoting *those* dalliances, but I did want to share the delicious road trip snack I made before we left. I finally got a dehydrator this week, and trying it out was like the first time playing with a new toy.

Since we had gone apple picking and still had quite the stash, I decided to try my hand at homemade apple chips. Even without mandolin, I still managed to do a good job thinly slicing the apples. I left the peels on for the extra fiber, and dipped them in a cup of water mixed with the juice of half a lemon first. Once I spread them out on the dehydrator trays I finished them off with a sprinkle of stevia and cinnamon.

It took 8 hours at 135 degrees for these to get perfectly crisp and ready to go. The kids fell in love; my son alone could easily have eaten three apple's worth of chips in record time. I can't wait to pick up some plaintains and make his ultimate favorite fruit chip!
